You can trim lime and pepper and sprinkle on top
Whole Zea Power cookies with pistachios
- 300gr cream cheese
- ¼ teaspoon sweet paprika
- 1½ teaspoon marjoram
- ½ teaspoon mustard
- ½ teaspoon ketchup
- ¼ teaspoon garlic
- 2 Anchovy fillets (don’t miss them)
- 1 eggplant in pieces
- 2 Pleurotus mushrooms
- 6 slices of proscuitto
Arrange the cookies in big oval plate.
In a blender, add the filling ingredients and blend until the mixture becomes a smooth cream.
Put a spoonful of cream on every cookie. You can use, if you wish, a cornet to make beautiful shapes.
Apply some oil on the eggplant and the mushrooms. Bake them on the grill or in the oven at 200o C until soft and brown (approx. 15’).
Cut in small pieces and decorate the middle of each creamed cookie.
Top tip: Pair this appetizer with a dry white wine.
