(use a cake mold of 22cm)
You can add a tablespoon of brandy in the marmalade and sprinkle the fruits.
Crust
Whole Zea Power cookies with cranberries (you will need about 10 cookies)
Syrup
- 100gr sugar
- 100gr water
Filling
- 600gr whole milk
- 70gr sugar
- 1 vanilla stick
- 45gr corn flour
- 2 eggs
- 1teaspoon water
- 220gr heavy cream
Decoration
- Fresh strawberries and berries
- Forest fruits marmalade
Instructions
Put the water and the sugar in a saucepan. Boil the syrup for 1’. Dip the cookies in the hot syrup for just 3’’ and put them in on a plate.
In a bowl, stir the eggs with 1teaspoon water.
In a saucepan, add the milk, the sugar and the corn flour and stir well. With a knife tear along the vanilla stick and scribe the filling. Add the vanilla stick and the filling in the saucepan. Boil the liquid while stirring continuously. When the mixture becomes thick, add the dissolved eggs. Keep stirring the cream for 1’. Empty the cream in a clean bowl. Refrigerate for 4 hours.
In a bowl, beat at a medium speed the heavy cream until soft peaks.
With a spatula blend the vanilla cream with the heavy cream until totally mixed, then refrigerate for two more hours.
Arrange half of the cookies at the bottom of the cake mold. With the help of a pastry bag cover the cookies with the cream. Repeat with another layer of cookies and cream.
Cut the strawberries in half and place on top of the cream.
Add the berries around the cake.
Sprinkle with the marmalade.
